Dark Chocolate Covered Almonds
If you like simple and easy then this might be the recipe for you. I make these treats to have around the house as that sweet snack I crave after lunch or dinner. I am not sure why, but these little guys were nick named “cat poop” at our house. When I was making them today, my son came up to the table and said, “I see you’re making cat poop.” I had a good chuckle. We might call them cat poop, but they sure taste nothing like it. (well, as far as I know, I’ve never tasted cat poop!) They are made with dark chocolate, almonds, and kosher salt. I use the 60% cacao dark chocolate because it has less sugar in it. I guess if you can call a dessert healthy this would be it. I try to make small, sweet snacks like this to satisfy my all too often craving for chocolate. The only problem is you have to stop at one or two and not eat all 25 of them in one sitting.
- 10oz bag of dark chocolate chips
- 6oz bag of whole natural almonds
- kosher salt
Line a baking sheet with parchment paper. Make small piles of about 6 or 7 almonds.
Melt the chocolate chip in the microwave for 1 minute and then an additional 30 seconds at a time until completely melted. Now with a spoon pour the chocolate over each pile of almonds one at a time.
Sprinkle a little kosher salt on the top. Refrigerate until hard. Store in an airtight container in the fridge. Enjoy!
