Delicious Granola

As you may have noticed, I’m always looking for a healthy snack for not only me, but the rest of my family. I love this granola because you can do so many different things with it. My favorite  way to eat it is as cereal with almond milk. You could also add it to your yogurt for and extra crunch.  However it’s great just as a snack  between meals. I like making my own granola rather then buying it because I know what’s in it. I really don’t remember how or why I found this recipe, but I found it over at sally’s baking addition, and I’m sure glad I found it, because I have made it numerous times. I have followed the recipe to a T and I have changed it up some. I’ve used maple syrup, but other times I have used honey instead. I use cranberries most of the time, but have also used yogurt covered cranberries. You can change it up however you like and I’m sure it will still be good. 2016-02-24 18.11.18

  • 3 cups of old fashion oats
  • 3/4 cup unsalted almonds
  • 3/4 cup cashews
  • 1/2 tsp. cinnamon
  • 1/3 cup flax seed
  • 1/2 cup peanut butter
  • 1/2 cup pure maple suyrup (I’ve also used honey)
  • 1/4 cup coconut oil
  • 1 egg white
  • 1 tsp. vanilla
  • 1 cup cranberries (I buy the less sugar)
  • 1/2 cup dark chocolate chips

Directions:

Preheat oven to 300. In a bowl mix together the, oats, cashews, almonds, flaxseed, and cinnamon, set aside. In a small bowl add the peanut butter, coconut oil, and maple syrup. Melt the mixture in the microwave for 1 minute, stir until combined. You may or may not need to heat it another 30 seconds.  Let that mixture cool for 10 minutes. Once cooled add the egg white and stir. You don’t want to add the egg to early because it will scramble the egg if too hot. Pour the mixture over the dry ingredients and mix until everything is coated. Place it in a roasting pan and bake for 45 minutes stirring it every 15 minutes. Pour the mixture out on some parchment paper and let it cool completely. Once cooled add the chocolate chips and cranberries. Store in an airtight container.2016-02-24 18.11.38
