Pesto Grilled Shrimp

This is my favorite way to have shrimp on the grill! These shrimp were marinated in pesto all day and then grilled to perfection on the grill. A few weeks ago the kids and I visited a friend from church. While we were there she offered me two small basil plants to take home and plant in a bigger pot. I quickly accepted thinking about all the recipes I love to make with basil. This shrimp is the first recipe that came to mind. I planted the two small plants and watched them grow, all the time thinking about shrimp and how delicious it was going to be. Basil is not always cheap so I greatly appreciate having the plant out on my back patio. Now I can go pick it whenever I need it.

If you’ve never had pesto shrimp before you must try this recipe its delicious.


  • 1 1/2 lbs. jumbo raw shrimp
  • 1/2 cup basil, packed
  • 1 Tbsp. pine nuts, roasted
  • 1 Tbsp. lemon juice
  • 2 Tbsp. olive oil
  • 2 Tbsp. parmesan cheese
  • 1 garlic clove
  • Salt and pepper to taste
  • 7 skewers


  1.  In a food processor add the basil, pine nuts, lemon juice, olive oil, parmesan cheese, and garlic. Blend until combined and smooth. Add salt and pepper to taste.2016-07-14 11.42.40-1
  2. Add the shrimp to a zip lock bag. Add the pesto mixture. Mix well and refrigerate for at least 30 minutes to over night. The longer the better.2016-07-14 11.48.53
  3. Put 6-7 shrimp on a skewer.2016-07-14 16.59.00
  4. Grill until done. About 5 minutes on each side.2016-07-14 17.19.41.jpg
